cooking for a toddler and husband...2

Well i said that i was going to post some more easy recipes in the next few weeks before Jacqueline arrives. This lets me keep them on hand so i can remember them and maybe to help a few people out. I'm posting budget recipes with this post.
Black beans an Rice
  • 2 teaspoons kosher salt
  • 2 1/2 tablespoons olive oil
  • 2 cups long-grain rice
  • 1 medium onion, chopped (1 cup)
  • 1 large green or red pepper, chopped (1 ½ cups)
  • 2 medium cloves garlic, minced (1 tablespoon)
  • 2 15-ounce cans black beans, undrained
  • 1 cup chicken broth
  • 2 tablespoons red wine vinegar
  • 2 bay leaves
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/2 cup sliced scallions (optional)
  • In a medium saucepan, combine 4 cups of water with 1 teaspoon of the salt and 1 ½ teaspoons of the olive oil. Bring to a boil. Stir in the rice, cover, and reduce heat to low. Cook for 20 minutes or until the rice is tender.

In a large saucepan, heat the remaining olive oil over medium heat. Sauté the onion, green or red pepper, and garlic until the vegetables have softened, about 5 minutes. Add the beans, broth, vinegar, bay leaves, black pepper, cumin, and remaining salt. Cover and bring to a boil. Reduce heat to low and let simmer for 10 minutes; remove the bay leaves. Spoon the beans over the rice and sprinkle with the scallions, if desired. Serve warm

French Toast
  • 4 eggs, beaten thoroughly
  • 1/4 tsp vanilla
  • 1/4 tsp sugar
  • 1/4 tsp cinnamon
  • 1-2 tbsp milk
  • 6 slices (or more) of whole wheat bread
  • Butter
  • Powdered sugar
  • Maple syrup
Coat a skillet with cooking spray & heat over medium heat. Mix eggs, vanilla, sugar, cinnamon & milk together thoroughly. Dip each slice of bread (on both sides) then place in hot skillet. Cook 2-3 minutes on each side until they are golden brown. Serve with butter, sprinkled powder sugar and maple syrup. I served with fresh fruit & turkey sausage. Enjoy

New foods i will try before having baby Jacqueline.

So i am trying to find some easy good recipes that i will be able to throw together after baby Jacqueline arrives. I am planning on trying these before she arrives. So i thought i would share these just in case anyone else would like to try them.
Garlic Chicken Pasta
2 cups cooked chicken, cut into bite sized pieces (great way to use up leftover chicken)
1 clove garlic or 1/2 teaspoon garlic powder (or more if you like lots of garlic)
1-2 Tablespoons olive oil
2 1/2 cups whole wheat pasta
3 cups whole milk
3 Tablespoons butter
1/2 t. sea salt
grated parmesan cheese
In a skillet, saute chicken and garlic in olive oil.  Turn to low heat to keep warm.  Meanwhile, cook the pasta in a big pot with the milk, butter and salt.  Stir almost constantly, especially as the pasta is becoming tender and the milk is beginning to boil.  Cook and stir over medium heat until pasta is tender and the starch from the pasta has thickened the milk, creating a creamy sauce.  Stir in the chicken and serve immediately…sprinkling parmesan cheese on each serving.
thank you to heavenly homemakers

I'll be posting more as i come across them:)
